Riesling
The mild maritime climate of Margaret River allows Riesling to express more floral characteristics and greater palate intensity than seen in cooler regions. Rieslings from Margaret River produced the region’s first trophy and gold medal.
Ashbrook Rieslings are made mainly from free run juice.

Made entirely from Estate grown Shiraz and gentle whole bunch pressed to achieve an attractive Salmon colour. The wine displays flavours of wild strawberry and has a crisp dry finish.

Chardonnay
This wine is 50% fermented and stored in new French barriques for 7-8 months. There is no lees stirring or malolactic fermentation, thus highlighting Margaret River’s attractive and intense primary fruit flavours and aromas which combine seamlessly with a backbone of quality oak. Margaret River consistently produces Australia’s best Chardonnays.

Reserve Chardonnay
Our 5 blocks of mature Chardonnay vines were hand-harvested in the cool of dawn over 3 days to ensure the optimal flavor profiles of each block were captured. Once a robust fermentation was underway, the wine was racked to an assortment of premium Bordeaux and Burgundian oak barriques with a combination of toasting levels and methods. Only brand new French oak is used to balance and enhance the powerful fruit flavours our Chardonnay consistently achieves. Upon completion of primary fermentation the 100% brand new French oaked wine is allowed to mature on undisturbed lees for 8 months prior to bottling. Malolactic fermentation and battonage were avoided to retain the primary fruit qualities and freshness crucial to our style of Chardonnay. Barrels selected for the Reserve wine displayed an elegance of fruit and length of palate representative of the 2013 vintage and balanced by a backbone of complex oak. Our first Reserve Chardonnay has had 28 months of bottle maturation in our underground climate controlled cellar ensuring a perfectly integrated, delicious and complex wine on release which will age graciously for many years to come.

Grown entirely on a “lyre” trellis system so as to eliminate green characters and highlight the attractive fruit flavours of this variety Ashbrook produces Shiraz wines of a silky, rich texture and medium to full bodied style, enhanced by 24 months in French oak and 18 months of bottle maturation.

Cabernet Sauvignon
Margaret River is regarded as the premier region in Australia for Bordeaux blends as typified by Ashbrook’s blend of approximately 75% Cabernet Sauvignon and 25% Merlot, Cabernet Franc and Petit Verdot. 24 months in French Oak and 18 months bottle maturation produce classical wines of elegance, intensity and opulence.

Reserve Cabernet Sauvignon
A limited quantity of French oak barriques have been selected to showcase the qualities of old vine Wilyabrup Cabernet Sauvignon. Small amounts of Merlot, Cabernet Franc and Petit Verdot have been added to further enhance the complexity and silky smooth structure of this wine.

Petit Verdot
One of only 300 bottles made. Estate grown, hand harvested fruit. Unfiltered for the truest expression of variety and terroir. The latest ripening of all the Bordeaux varieties, Petit Verdot thrived in this warm sunny vintage on our open lyre trellis. Unusually delicate acid and tannin at optimal flavour development left us no choice but to create this unique and intriguing wine.
A perfumed nose of violets, lilac, raspberry, cherry plum and dark chocolate precedes the elegant, supple palate of cherry plum, sweet spice, sage and dried herbs with fine, velvety tannins.
